A Recipe for Flourless Mexican Chocolate Cake

Today I spoil you, Dear Reader.
After all–we’ve been together long enough where a person might blushingly recognize the proper time to bequeath an invention: one which is not just any old grandmotherly reading recipe, but rather, THE reading recipe. At least it is in my world. This is my baby. My love. Treat her well. Perhaps pair her with a strong red wine or dark coffee and an afternoon reading of Austen or Tolkien.
Both elegant and easy, she tastes amazing served hot from the oven, or (if you’re in a time-crunch) made a day ahead and chilled.
And I’ll just say it now: You’re welcome.
But tell me this before you go: What luscious work of fiction are you currently entangled in?
Flourless Mexican Chocolate Cake
- 2 bricks Mexican chocolate (such as Ibarra)
- 10 oz. semisweet chocolate chips
- 2 sticks butter
- 1 tsp. vanilla extract
- ¼ cup sugar
- 7 large eggs
- Heat oven to 350 degrees. Line the bottom of a 8 or 9-inch springform pan with wax paper. Spray the sides with cooking spray.
- Melt butter, vanilla, sugar, and both types of chocolate in a heavy saucepan over low heat, stirring continuously until smooth. Cool for 15 minutes.
- Bring whole (not yet cracked) eggs to room temp by placing them in a bowl of warm water for 5 minutes. Remove and crack into separate bowl.
- Use an electric mixer to beat the eggs until thick and pale, about 5 minutes. Blend ½ cup into chocolate mixture. Fold in the rest.
- Pour batter into the prepared pan and place on a baking sheet in the oven. Bake until tester inserted into center comes out moist but not runny. About 35 to 40 minutes. Cool in pan 20 minutes.
- Run knife around pan sides to loosen. Remove springform sides. Gently place platter upside-down over cake and flip cake onto platter. Remove pan base and wax paper.
- Serve warm or chilled with whipped cream.

Mary this looks mighty tasty but I’m afraid I am terrible at all things “baking”…so maybe you should just make this for me when I come to town? haha, yes please.
I am reading: “Eat Pray Love” by Elizabeth Gilbert.
Super random read! I was in a used book store and saw it and thought that the title sounded familiar (and the book looked catching as well, I am a sucker for a good book cover despite what people may say) and so I bought it for I think… $1.00! My friend Rachael apparently read it and liked it. I think she (the author) is very funny and her life seems very interesting. She is a complete opposite of me and it is fascinating and I am kind of jealous that I am not more of a relaxed/not picky eater.
This book does make me want to pack up everything an float away to Italy though. some day…

I have been waiting for this recipe for years…
Sadly, I’m not wrapped up in any work of fiction. But I do have a long weekend coming up – away, with only one of my men – my main man – in a cabin – which calls for good reading (and probably this cake.) So soon, soon, I will partake in fiction again. It’s been too long…

Bethany, you’ll have to tell us how you liked it once you’re completely done. I’ve heard diverse opinions on that one (mainly surrounding the author more than her beautiful book), although I think we can all agree that a fabulous “float away” to Italy is a must for the future

My 10-year-old wrote a letter to C.S. Lewis yesterday telling him how much she loved “The Silver Chair,” Heather. I had a hard time admitting to her that he’d been dead for the past 40 years.

YUM YUM…can’t wait to taste this…well, fudge omelette? Also looking forward to Bethany’s report on “Eat, Pray, Love” (although not fiction, of course) but I loved the book and thought as memoirs go, it really shined.
So…I’ve abandoned the Man-thingies for a while (although they still surround me), and I’m back to something more gender-neutral: Jody Picoult’s “Salem Falls.” Again, a loner from a friend. Lots going on in this plot. I hope she ties up all the ends with skill, or I might chuck it into the back seat like I did “My Sister’s Keeper.”

hmmmm………this looks amazing. too bad i gave up chocolate for lent. maybe a good recipe to try out for easter dinner! HA!
i am reading a silly book called “momzillas” right now. its really silly. in fact, i doubt i will finish, not worth my time. i just finished barbara kingsolver’s “prodigal summer” though. THAT was worth my time. so pretty and nice. you should read it, if you havent.
